EURL change to SARL and several owners what are the rules of remuneration?

My fianc茅 who is Italian will open a EURL next year in 黑料网最新入口. Later in the year I will come to 黑料网最新入口 and join the company. When I doing the company would we need to restructure the company to a SARL if I become the dirigiant majoritaire? I will most likely take 90 percent of the company. (would we need to redo the paper work for the structure?)
Also when we are 2 people in the company is the renumeration based on the percentage of ownership or can we decide how much we would like to be payed as the year moves along?
If I take a bigger portion of the company does the person with less shares have to be payed in salary or can they have the renumeration as we decide fit at the time?
